Head Chef - David Witnall

I entered the professional kitchen at 16, doing serving apprenticeship at the 5

star Swallow hotel in the centre of Birmingham. From there I moved to a 2 AA

rosette, Michelin recognised restaurant, The Forest in Dorridge, working up to

the position of senior sous chef. 


After working around the city of Birmingham and a year travelling Asia ,Oceana and Africa, I moved to the Cotswolds for a different pace of life and to be closer to the local farm produce the region offers.


Since being in the area, as a Head chef, myself and team gained 2 rosettes at Jesses Bistro, Cirencester.

modern British dishes led the way on the menu, with sparks of world food inspiration.


I love the change of seasons and the abundance of produce they bring. Foraging for wild garlic in Spring, cooking wild Cornish seabass on the BBQ and fresh berries of Summer, and Autumn for wild mushrooms and Game.


Drawing on the near 25 years knowledge and experience I have gained, I can design bespoke menus for our clients for any event and occasion.

I am a self-taught cook and have been lucky enough to incorporate my passion within my career. 
My love of cooking started at an early age gazing longingly at the exquisite dishes my mother would prepare for her dinner parties. In my teens she finally ran her own successful bistro of which I would help out in the kitchen during my weekends and holidays. 

With a penchant for the culinary world I decided to combine this with my teaching degree and moved away to pursue a career in high profile Nannying for the rich and famous in London and around the world. Each role would include cooking for the family pushing me to learn fast and experiment with flavours. 

I am at my happiest preparing food in my kitchen for family and friends.
